Busy Bee Cafe: Sustainably Delicious

Where: Busy Bee Cafe, Raleigh, NC

GF Menu: No. But they do have GF Beer!

What I ate: Organic Chicken with Collards and Hoppin’ John + New Grist Beer (made from Sorghum and Rice).

How to order it: Sitting at the bar, I asked the wait staff what they would order for dinner if they were me. I got a resounding “Organic Chicken!” from three enthusiastic folks, one of whom stopped in her tracks, and put down the drinks she was carrying to another table, in order to sing her praises of this dish. Another waiter confessed that, after the first time he had it, he ate it every night for a week. He still likes it. Because they mentioned that the chicken was fried, I made sure to ask whether it was breaded. They said it was not.

The chicken was exceptional. I should have included an “after” shot of this dish below – it would have looked a little bit like modern art – a tiny, lone bone on a background of clean, white ceramic.

What it looks like:

A juicy-on-the-inside, succulent chicken flash-fried (without breading) to a light crispiness on the outside. The collards are thinly-sliced as a garnish, almost like Japanese nori. The Hoppin’ John provides a perfectly complementary bed upon which to showcase the bird.

Green Note: This restaurant was packed. They have a good formula going. My hunch is that diners are waking up to the difference that local, organic, and seasonal ingredients make on taste. Kudos to Busy Bee for keepin’ it local!
