What I ate: Grilled Grouper Salad (Special) from the Lunch Menu

How to order it: Ask the server whether the fish has been breaded or seasoned prior to grilling. There was no breading on this fish and the server assured me that the basic seasoning did not include gluten.

Also ask whether the salad dressing contains any wheat. I chose a basic oil-and-vinegar dressing. As long as the vinegar used in this type of dressing is not a malt vinegar (typically made from barley, a gluten grain), it should be GF.

Grilled fillets of flaky Grouper fish arrived warm on a bed of fresh lettuce, cool cucumber and carrot slices, and ripe tomatoes. With a little lemon squeeze, this dish was already delicious. Add the oil and vinegar dressing and it has all the right elements – a basic buttery fish and a satisfyingly acidic, cleansing finish.

Green Note: Finz has a large, outdoor dining deck overlooking the Taylor’s Creek waterway toward Carrot Island, where the Shackleford Ponies roam. In 1985, this area was named the “Rachel Carson Estuarine Reserve” in honor of the author of Silent Spring, the groundbreaking 1962 book that exposed the dangers of pesticides to the environment.

Finz reduces the amount of waste in the restaurant by using washable ceramic dishes (the dishes pictured above are colorful Fiestaware) and a take-as-you-need basket of napkins.
